1 lb fresh white fish fillets
1 lb fresh asparagus, trimmed
1 cup cherry tomatoes
2 tablespoons olive oil
1 tablespoon Lemon Pepper seasoning
4 lemon slices
1 teaspoon lemon juice
Rinse your fish and pat dry with a paper towel. Preheat the oven to 425 degrees. Place the fish in a baking pan and tuck under any thin edges.
Place your asparagus and tomatoes around the fish. Place a lemon slice on top of each fish. Sprinkle Lemon Pepper seasoning on top then drizzle with olive oil and lemon juice.
Bake 12 to 15 minutes or until the fish flakes easily, the asparagus is crisp and tender, and the tomatoes are softened.
