Almond Crumb Chicken

This one was fun. I wanted to try something a little different, a little new, and I just had to share this one. I was looking for a healthier alternative to breaded chicken, and almonds are absolutely perfect for the job. Almonds are high in protein and nutrients. 4 chicken breasts

2 cups raw, unsalted almonds

1 cup all-purpose flour

2 sprigs fresh rosemary

1 medium shallot

3 large eggs, beaten

4 tablespoons seasoned butter

1 teaspoon salt (optional)

4 tablespoons Basin Blend


  1. Preheat the oven to 400 degrees
  2. Lay the chicken breasts in a medium casserole dish and season with 2 tablespoons Basin Blend and a teaspoon of salt (optional)
  3. Mince the shallot
  4. Grind up the almonds and rosemary in a food processor into a rough powder resembling breadcrumbs
  5. Heat a medium-size skillet over medium heat. Melt the butter, then add the almond crumbs and minced shallot. Cook until the shallots are clear and the almond crumbs are golden brown (about 8 minutes)
  6. Spread the almond mix on a plate and prepare to dredge the chicken
  7. Dredge the chicken breasts by pressing them into first the flour, then the eggs, then the almond crumbs
  8. Bake the chicken breasts at 400 degrees until the internal temperature is 165 degrees (25-35 minutes)

Serves 4-6
